Pineapple Pie

Here is the recipe for my favourite pineapple pie that I mentioned in an earlier post.
If you prefer to read the following recipe in Swedish, here‘s where I stole it from.

Dough ingredients

1 deciliter sugar
3 deciliters wheat flour
1 teaspoon baking powder
150 grams of butter (or margarine)


Filling ingredients

One can with 400-500 grams crushed pineapple, drained.
2 deciliters crème fraîche
0,5 deciliter sugar
2 teaspoons vanilla sugar
1 egg


How to do it

Start with the dough: melt the the butter and then put it aside to cool off a little. Mix the other dough ingredients in a bowl and pour over the butter. Work it to dough.

Press the dough into a pie form, preferably a springform pan. (You know how a pie shell looks like. That’s how this should look like as well ;)

Then we  move on to the filling. This is simple! Just two things to remember: Do not bake the shell before adding the filling, and remember to drain the crushed pineapples before adding them into the filling mix!

With that said: Mix all the filling ingredients together well and pour the mix into the pie dough shell.

Lastly: Bake it in the middle of the oven for ca. 30 minutes, 200 degrees Celsius. Let the pie cool before serving.

Enjoy with vanilla ice cream!
